Rice and courgette tart
INGREDIENTS:

  • 750 GR. OF COURGETTES
  • ¼ ONION
  • 2 EGGS
  • 3 SMALL COFFEE CUPS OF RICE
  • ½ LITRE OF MILK
  • 2 TABLESPOONS OF OLIVE OIL
  • SALT
  • SWEET MAJORAM
  • A HANDFUL OF PARMESAN CHEESE

PREPARATION:

Slice the courgettes and fry in a frying pan with some oil, a little salt and the sliced onion. Boil the milk, add the rice and a little salt and continue cooking until all milk has been absorbed.

Place the rice in a bowl and mix with the courgettes, the two eggs, the parmesan cheese, a little sweet majoram, salt and pepper to taste. Pour the mix in a greased baking tray and place in a preheated oven. Cook at 180° C for 40 minutes.

This is a full meal when accompanied by cold meats and cheeses. Also delicious cold (room temperature).
