INGREDIENTS:
PREPARATION: Soak the raisins in warm water. Clean and wash the spinach. Place in a large saucepan without drying them and cook for 5 minutes on high heat, with the lid on. Drain and place under the cold water tap. This will ensure that the bright green colour is maintained. Squeeze all the excess water. Brown the peeled, chopped onion in a pan with butter and oil. Add the spinach. Mix and leave them to absorb the flavour for a couple of minutes. Add salt and pepper to taste and then the nutmeg and the squeezed raisins. Cook for a further 5 minutes on medium heat, stirring occasionally. |
