Aubergines parmigiana
INGREDIENTS:

  • 4 BIG AUBERGINES
  • FRYING OIL
  • FLOUR
  • 500 GR. OF TOMATO PURE
  • ½ ONION
  • BASIL LEAVES
  • 3 TABLESPOONS OF OLIVE OIL
  • 125 GR. OF GRATED PARMESAN CHEESE
  • 250 GR. OF SLICED MOZZARELLA CHEESE
  • SALT AND PEPPER

PREPARATION:

Slice the aubergines into rings, sprinkle with salt and leave to drain for one hour. Dry well, coat them in the flour and fry in a generous amount of frying oil. Place on kitchen paper to remove excess oil.

In the meantime, prepare a sauce using the olive oil, the onion, the tomato pure and the basil. In a baking build up alternate layers of aubergines, sauce and mozzarella cheese until all ingredients have been used. Place in a hot oven, at a temperature of 180°C for 30 minutes. Serve warm.
