INGREDIENTS:
PREPARATION: Cut the mozzarella in 2 halves and remove the inside pulp with a spoon, leaving an outer shell. Chop the pulp finely. Cut the tomato in 4 wedges and remove the seeds. Chop finely and add to the chopped mozzarella, together with the capers, the milk flakes, a generous amount of chopped basil and some chopped spring onions. Season with oil, salt and pepper. Mix well and use to fill the mozzarella shells. Place in a fridge for half hour. Before serving place some tomato quarters on top of the mozzarella. Place the shells on the lettuce leaves and serve. |
