Stuffed mozzarella cheese
PER 2 PERSONE
INGREDIENTS:

  • 1 LARGE BUFFALO MOZZARELLA
  • TWO LARGE FIRM TOMATOES
  • TABLESPOON OF CAPERS
  • 1 SMALL TRAY OF MILK FLAKES
  • SPRING ONIONS
  • A SMALL BUNCH OF BASIL
  • EXTRA VIRGIN OLIVE OIL
  • SALT
  • PEPPERCORNS
  • LETTUCE LEAVES FOR THE GARNISH

PREPARATION:

Cut the mozzarella in 2 halves and remove the inside pulp with a spoon, leaving an outer shell. Chop the pulp finely.

Cut the tomato in 4 wedges and remove the seeds. Chop finely and add to the chopped mozzarella, together with the capers, the milk flakes, a generous amount of chopped basil and some chopped spring onions.

Season with oil, salt and pepper. Mix well and use to fill the mozzarella shells. Place in a fridge for half hour. Before serving place some tomato quarters on top of the mozzarella. Place the shells on the lettuce leaves and serve.
