Sweet and sour aubergines
INGREDIENTS:

  • AUBERGINES
  • TOMATOES
  • SALT
  • SUGAR
  • WHITE WINE VINEGAR
  • OIL

PREPARATION:

Slice the aubergines into thin slices (1 cm maximum) and fry. When golden remove from the pan, drain and place them on a deep serving dish. Using the same pan, cook some broken ripe tomatoes, seasoning them with a bit of salt and sugar.

When the tomatoes are almost cooked, add a trickle of good quality white wine vinegar. Once the vinegar has disappeared, pour the sauce on the aubergines. Serve cold. This dish will also taste great the day after
