Cheese fondue
FOR 4 PEOPLE
INGREDIENTS:

  • 300 GR. OF SWISS CHEESE (GRUYERE)
  • 400 OF DRY WHITE WINE (RIESLING DELL'ALTO ADIGE)
  • 1 CLOVE OF GARLIC
  • A SMALL GLASS OF KIRSCH
  • 1/3 OF A TEASPOON OF CORNFLOWER
  • A PINCH OF BAKING SODA
  • NUTMEG
  • SALT AND PEPPER

PREPARATION:

Grate the cheese and place in a terracotta pot, the which internal surface will have previously been rubbed with the garlic. Cover the cheese with the wine and place the pot on very low heat. Stir constantly with a wooden spoon.

Mix the cornflower and a little grated nutmeg with the kirsch and add to the cheese when this starts melting. Continue stirring. Once the fondue is ready to be removed from the heat, season with a generous serving of pepper. Stir in the baking soda: this will make the dish lighter.

Place the pot on the dinner table on a low burner, ensuring that the fondue continues simmering very gently.
