INGREDIENTS:
PREPARATION: Boil the potatoes. Remove the skin and mash in a bowl, using a potato masher. Add the eggs, the mozzarella cut into small cubes, the parsley, salt, parmesan cheese and pepper. Mix well until an even mix is obtained. In a separate bowl, beat the egg and the salt together. Fill a separate plate with the breadcrumbs. Wet you hands and shape the potatoes mix into individual croquettes shapes of desired size. Coat the croquettes with the eggs and then with the breadcrumbs. Place to rest on a serving plate. Place in the refrigerator for approximately 20 minutes. Heat a generous amount of oil in a non stick pan and carefully fry the croquettes, ensuring that they are fully covered by the oil and that they do not break. Leave to fry on moderate heat. When golden, remove from the pan and place on kitchen paper to remove the excess oil. |
