INGREDIENTS:
PREPARATION: Wash the cabbage, remove the outer leaves and make a cross cut on the base. In a casserole dish (possibly clay) sweat some chopped onions using a tablespoon of extra virgin olive oil. Add the cabbage, the black olives and some pepper. Add salt to taste and wet with the broth. Cover the casserole and cook at very low heat until the cabbage is ready (i.e. wilted, sitting on the bottom of the casserole). Check regularly during cooking and add more broth when needed. To serve, cut the cabbage in large pieces and place in a wide serving dish, cover with the tomato sauce and a trickle of oil. Serve hot. |
